Ingredients
For the Filling:
1 can Mementa's Organic Coconut Condensed Milk
½ cup lime juice
4 extra-large eggs
3 teaspoons cornstarch
5 tablespoons vegan butter
For the Crust and Topping:
1 graham cracker crust (found in the baking aisle)

Instructions
1. Prepare the Filling:
In a small saucepan, combine Mementa's Coconut Condensed Milk, lime juice, eggs, and cornstarch. Mix thoroughly.
2. Cook the Mixture:
Add the vegan butter to the saucepan and cook over low heat, whisking continuously. Once the first bubbles appear on the surface and the mixture thickens enough to hold marks from the whisk (about 6-8 minutes), remove from heat.
3. Assemble the Pie:
Pour the thickened filling into the graham cracker crust.
4. Chill the Pie:
Cover with plastic wrap and refrigerate for at least 5 hours, preferably overnight, to set.
