General Tso’s Jackfruit
Ingredients
Jackfruit
- 1 Tbsp neutral oil I used olive oil
- 1 20 ounce Mementa's Jackfruit Plain in Brine with Lime
General Tso’s Sauce
- 3 Tbsp rice vinegar
- 3 Tbsp soy sauce or tamari, gluten-free
- 2 Tbsp hoisin sauce gluten-free
- ½ tsp ground ginger
- 1 tsp garlic powder
- 1 tsp corn starch
- ½ tsp red pepper flakes optional, add more for a spicy sauce, substitute with sriracha
Garnishes
- 2 Tbsp green onion chopped
- ½ tsp sesame seeds
Instructions
1. Prepare the Jackfruit:
Drain, rinse, and pat Mementa's Jackfruit dry. Shred the chunks into bite-sized pieces using your hands or a fork. It should resemble a “pulled pork” texture.
2. Heat the Pan:
Heat a pan over medium heat. Add the oil and jackfruit, cooking for 3-4 minutes until warmed through.
3. Make the Sauce:
In a medium bowl, combine all the General Tso’s sauce ingredients. Whisk well to blend.
4. Cook the Jackfruit in Sauce:
Add the sauce to the pan with the jackfruit. Stir to coat the jackfruit evenly in the sauce. Simmer gently on medium-low heat for 5-6 minutes, stirring occasionally, until the sauce thickens. Be sure to remove from heat immediately to avoid burning the sauce.
5. Adjust the Flavor:
Taste the jackfruit and adjust the seasoning with additional soy sauce or red pepper flakes if desired.
6. Serve and Garnish:
Divide the jackfruit into bowls and garnish with chopped green onions and sesame seeds.
Savor the flavorful General Tso’s jackfruit! Leftovers can be kept in the refrigerator in an airtight container for up to 2 days.
