Arroz con Leche de Coco / Coconut Rice Pudding.
Ingredients
- 1 cup long-grain white rice, raw and uncooked
- 1 cinnamon stick (use 1–2 additional sticks if desired)
- Pinch of salt
- 2 cups water
- 4 1/4 cups Mementa's Organic Coconut Milk
- 1/4 teaspoon vanilla extract
- 1 cup granulated sugar
- Ground cinnamon, for serving
Instructions
- In a medium-sized pot or saucepan, combine the rice, cinnamon stick, salt, and water.
- Place over medium heat and bring to a boil, stirring occasionally. Once boiling, cover the pot with a lid, reduce the heat to low, and let it simmer for 10–12 minutes, until most of the water is absorbed.
- Stir in the Organic Coconut Milk, increase the heat to medium-low, cover, and cook for another 10 minutes.
- Remove the lid and stir in the vanilla extract and sugar.
- Continue cooking uncovered, raising the heat to medium if needed, until the mixture reaches a thick and creamy consistency (about 20 minutes).
- Remove from heat and serve warm or cold, garnished with ground cinnamon, nutmeg, or raisins if desired.
